- 1 ½ cups half-and-half
- ½ cup packed brown sugar

- 1 cup heavy whipping cream

Make custard base
- Stir together the half-and-half, sugars, cinnamon, nutmeg, and salt in a pot over medium-low heat until the sugars dissolve, about 3 to 5 minutes.
- Whisk the eggs in a bowl until frothy.
- Continue whisking while you slowly pour about ¼ cup of the hot half-and-half mixture into the eggs.
- Pour the egg liquid from the bowl back into the pot and set onto the heat.
- Stir in the cream.
- Continue stirring until the liquid thickens enough to coat the back of a spoon, about 5 to 7 minutes more.
Chill, churn, and freeze
- Place a bowl into a larger bowl filled with ice cubes.
- Pour the thickened cream through a fine mesh strainer (or colander) into the bowl. The strainer will catch any solid pieces.
- Continue whisking the cream in the bowl in the ice bath until it is cool.
- Stir in the mashed bananas.
- Pour the ice cream base into an ice cream machine and freeze according to the manufacturer’s directions, adding the crushed cookies near the end of the cycle.
- Serve soft, right from the machine, or transfer to an airtight container and place into the freezer.
