Buffalo Chicken
We are taking the aggressive, addictive flavors of classic pub wings and translating them into an incredibly sophisticated, fork-and-knife main course. By tossing boneless thighs in seasoned flour and baking them with a heavy pat of butter, we create a faux-fried texture without the mess of a deep fryer.
The real elevation, however, happens halfway through the bake when we drown the golden chicken in a bright emulsion of sharp white wine vinegar, olive oil, fresh jalapeรฑos, and classic hot sauce. Finishing the bubbling dish with massive crumbles of cold, pungent blue cheese creates an irresistible contrast in both temperature and texture.

Ingredients
For the chicken
- 1 cup unbleached all-purpose flour
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon coarse black pepper
- 4 (4- to 6-ounce) boneless, skinless chicken thighs
- 4 tablespoons butter, ยฝ stick
For the buffalo sauce
- 1 bunch (5 to 6) green onions, tough tops removed, cut into thin slices, about 1 cup
- 1 small jalapeรฑo pepper, seeded, deveined, and finely diced, about 2 tablespoons
- ยผ cup hot pepper sauce
- ยผ cup white wine vinegar
- ยฝ cup olive oil
- crumbled blue cheese
Instructions
Make and first bake
- Preheat your oven to 425ยฐ.
- Add the flour, chili powder, onion powder, garlic powder, salt, and pepper to a resealable plastic bag.
- Add one or two chicken thighs to the bag and shake, shake, shake until the chicken is coated. Lay the thighs in a baking pan coated with cooking oil spray. Repeat until all the chicken is coated and in the pan.
- Top each chicken piece with a pat of butter.
- Bake until the top of the chicken begins to turn golden, about 15 to 20 minutes.
Make sauce and final bake
- Whisk together the green onions, diced jalapeรฑo pepper, hot sauce, and vinegar in a small bowl.
- Slowly whisk in the olive oil.
- Remove the chicken from the oven and reduce the temperature to 350ยฐ.
- Pour the sauce over the chicken.
- Place the pan back into the oven and bake until the chicken is completely cooked, reaching an internal temperature of 165ยฐ, about another 20 minutes.
- Remove the chicken from the oven and crumble blue cheese over the top.
