Classic Caesar Salad
The Caesar you remember from the best table you ever sat at โ bold, savory, and unapologetically anchovy-forward. I long ago abandoned the raw egg and never looked back; smashing the garlic, mustard, and anchovies into a paste right in the bowl builds all the depth you need. A little balsamic alongside the lemon gives the dressing a rounder, almost sweet backbone that keeps people going back for one more forkful.

Ingredients
For the dressing
- 2 medium garlic cloves, minced, about 2 teaspoons
- 1 tablespoon Dijon-style mustard
- 1 tablespoon Worcestershire sauce
- 1 (2-ounce) tin anchovy fillets, packed in oil
- juice of 1 medium lemon, about 3 tablespoons
- 1โ4 cup balsamic vinegar
- 1โ2 cup extra virgin olive oil
- 1 teaspoon (or more) coarse black pepper
For the salad
- 1 large head romaine lettuce, washed, dried, and torn into strips, about 6 to 8 cups
- 1 cup croutons
- 4 ounces Parmesan cheese, grated, about 1 cup
Instructions
- Place the garlic, mustard, Worcestershire sauce, and anchovies (with their oil) into a large wooden bowl. Use the back of a wooden spoon to smash everything together until it becomes a paste.
- Add the romaine leaves to the bowl, sprinkle with the lemon juice, and drizzle the balsamic vinegar over the top.
- Add the croutons and Parmesan cheese, then drizzle with half of the olive oil.
- Toss everything together, making sure you lift all the good stuff from the bottom of the bowl.
- Taste and add olive oil as desired. Season generously with coarse black pepper.
If you donโt have a wooden bowl for your salad, or if you are making a BIG batch of dressing, you can make the salad dressing in advance by using a blender. Place the garlic, mustard, Worcestershire, anchovies, and balsamic vinegar into a blender. Pulse to combine. With the machine running, gradually add the olive oil. Season with salt and pepper. This dressing will be thick and creamy and will last in a resealable container for a week or more in your fridge.
