Cobb Panini

Ingredients
For bread and spreads
- 1⁄2 pound bacon
- 4 thick slices whole grain bread
- 2 to 3 tablespoons olive oil
- 2 tablespoons mayonnaise
For panini fillings
- 6 ounces blue cheese, crumbled, about 1 cup
- 1 avocado, pitted, peeled, and sliced, about 1 cup
- 1 boneless chicken breast, halved, roasted, sliced, about 1 cup
- 1 large egg, cooked, peeled, and sliced
- 1 large tomato, cored and sliced
For seasoning and condiments
- 1 teaspoon kosher salt
- 1 teaspoon coarse black pepper
- 1 tablespoon Dijon-style mustard
Instructions
- Cook the bacon in a skillet over medium heat. Remove the bacon and lay it on a couple of paper towels to drain the excess grease.
- Preheat a panini press. (If you do not have one, you can use a grill pan with a weighted skillet on top of the sandwiches.)
- Brush one side of each bread slice with olive oil.
- Lay two pieces of bread on your work surface, oil side down. Spread mayonnaise over both slices of bread. Layer with slices of bacon, half of the blue cheese, and then the avocado slices, roasted chicken slices, sliced egg, and tomato slices. Season with salt and pepper and top with the remaining blue cheese.
- Spread mustard on the non-oiled side of the remaining two bread slices and close the sandwiches.
- Carefully transfer the sandwiches to the panini press. Press the top of the panini grill on the sandwiches. Increase the pressure to gently flatten the sandwiches.
- Cook until the cheese melts, and the bread is golden, about 5 to 7 minutes.
- Cut the panini in half and serve warm.
Do not skimp on the bread. A standard slice of sandwich bread will instantly disintegrate under the weight of these ingredients and the pressure of the grill. You absolutely need a thick, hearty whole grain or sourdough loaf to maintain the structural integrity of this sandwich.
