Ingredients
For the brie
- 1 (8-ounce) wheel brie cheese
For the poached cherries
- 8 ounces fresh sweet cherries, pitted, about 1 cup
- ½ cup red wine
- 1 teaspoon granulated sugar
- 1 teaspoon finely chopped fresh rosemary
- ¼ teaspoon kosher salt
- ¼ teaspoon coarse black pepper
For serving
- Apple slices
- Crackers
Instructions
Poach the cherries
- Preheat the oven to 350°.
- Place the cheese into a shallow baking dish, that is lined with parchment paper.
- Place the cherries, wine, sugar, rosemary, salt and pepper into a saucepan over medium heat.
- Simmer the cherries until they are soft and beginning to burst, about 5 to 7 minutes.
- Remove from the heat.
Bake and serve
- Spoon the cherries and some of the juice over the top of the cheese.
- Place the baking dish into the oven and cook until the cheese begins to soften, about 5 to 8 minutes.
- Serve the warm cheese and cherries with crackers and apple slices for dipping.
