Chicken Cobb Club Sammies
Take the classic Cobb salad and turn it into a spectacular double-decker sandwich layered with roasted chicken, bacon, avocado, heirloom tomatoes, and hard-boiled egg. Spread the artisanal bread with a rich, blue cheese mayonnaise before assembling the layers. Wrap in parchment paper to let the flavors meld before slicing and serving.

Ingredients
- 1 cup homemade or prepared mayonnaise
- 2 ounces, blue cheese, crumbled
- 2 to 3 drops hot pepper sauce
Sammie Base and Proteins
- ⅓ pound bacon, about 6 slices
- 6 thick slices artisanal bread
- 3 red leaf lettuce leaves
- 1 large ripe heirloom tomato, cored and sliced
- 1 large chicken breast, roasted, bones and skin removed, diagonally cut into 1-inch slices
Sammie Seasoning and Toppings
- ½ teaspoon kosher salt
- ½ teaspoon coarse black pepper
- 1 medium whole ripe avocado, pitted, peeled and sliced
- 1 large hard cooked egg, peeled and sliced
Instructions
- Whisk the mayonnaise and blue cheese together until smooth.
- Whisk in as much hot pepper sauce as you like.
Sammies
- Cook the bacon in a skillet over medium heat. Use a splatter screen if you have one.
- Remove the bacon to paper toweling to drain. Lay the bread onto your work surface.
- Spread the blue cheese mayonnaise over 1 side of each slice.
- Layer 2 pieces of bread with a lettuce leaf, tomato slices and slices of chicken.
- Season with salt and pepper.
- Top each with a slice of bread – mayo side up.
- Top the second layer of bread with slices of avocado, hard boiled egg and bacon.
- Top each with the remaining bread – mayo side down.
- Wrap the sandwiches in parchment paper and store until ready to serve.

Join the Estate RegistryWhen you fry bacon (or most everything) in a skillet there is a good chance that the sizzling food will splatter as it cooks. You can minimize some of the mess by using a splatter screen on top of the skillet. My favorite is a heavy duty topper, but splatter guards come in all shapes and sizes – for messes both big and small.
To roast chicken breasts, rinse the breast and pat dry. Preheat the oven to 425°. Lay the breasts onto a baking sheet with lip. Season with salt and pepper. Drizzle with olive oil. Place into the oven. Reduce the oven temperature to 375°. Roast for 20 to 25 minutes. The chicken is done when you poke it with a fork and the juices run clear.
