Frozen Strawberry and Avocado Cream with Coconut
Pureeing ripe avocado with sweetened condensed milk, lemon juice, and half-and-half creates an exceptionally velvety, rich ice cream base. Ingredients
- 1 (14-ounce) can sweetened condensed milk
- 1 medium avocado, halved, pitted and peeled, about 1 cup
- Juice of 1 medium lemon, about 2 tablespoons
- ¼ teaspoon kosher salt
- 2 cups half-and-half
- 10 medium fresh strawberries, stems removed and mashed, about ½ cup
- ½ cup shredded sweetened coconut
Instructions
- Pour condensed milk into a bowl. Add the avocado, lemon juice, salt and half-and-half. Use an electric mixer or emulsion blender to puree the ingredients into a thick cream. Pour the cream into the bowl of a chilled ice cream maker. Follow the directions for your machine. Add the strawberries during the last several minutes of churning.
- Scoop the ice cream into a resealable plastic container. Chill in the freezer for several hours. Scoop the ice cream into bowls. Garnish with shredded coconut.
Just because the outside of that desolate avocado is shriveled up doesn’t mean that the inside isn’t bursting with rich, creaminess. You needn’t discard the overripe avocado. Its thick peel will maintain the natural velvety texture for many of your favorite recipes.
