Crispy French Fries with Spiced Ketchup

The Strategy:

Soak and dry cut potatoes, then double-fry them — once low to cook through, once hot to crisp — for the crackling, fluffy-centered fry of your dreams, served with a homemade spiced ketchup. The two-fry method is the secret every great fry shares, and it is entirely worth the extra step.

The perfect French fry is a two-stage achievement: shatteringly crisp on the outside, fluffy and tender within. The secret professionals swear by is the double fry — a first gentle fry to cook the potato through, then a second hot fry to crisp and color it. Paired with a homemade spiced ketchup that leaves the bottled kind behind, these are fries worth making from scratch, the kind that turn a simple dinner into a treat.

Prepping & the First Fry

Great fries begin before the oil. Soak the cut potatoes to rinse away excess starch, then dry them thoroughly — surface moisture is the enemy of crispness and the cause of spattering. The first fry happens at a moderate temperature: this stage cooks the potatoes through and sets their structure without coloring them, so they come out pale and tender. Drain and cool them completely; this rest is part of the magic, letting the surface dry so the second fry can crisp it.

The Second Fry & Spiced Ketchup

Now comes the crunch. Fry the cooled potatoes a second time in hotter oil, where they blister, turn deep golden, and crisp into a shatteringly crunchy shell around their fluffy centers. Drain them on a rack and salt them immediately, while they glisten. Alongside, simmer a homemade spiced ketchup — tomato brightened and deepened with warm spices and vinegar — that tastes worlds better than the bottle. Serve the fries piping hot, with the ketchup for dunking.

  • 1/4 cup red wine vinegar
The Spices & Water
  • 1/2 teaspoon hot ground mustard
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon coarse salt plus more for fries
  • 1/2 teaspoon coarse black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 cup water
Sunday Best Fries
  • 2 large Idaho potatoes scrubbed
  • Canola oil for frying

Equipment

  • 1 Large metal baking sheet
  • 1 Heavy-bottomed cast-iron skillet
  • 1 Heavy-bottomed saucepan
  • 1 Professional kitchen thermometer
  • 1 High-speed kitchen blender

Method

Homemade Ketchup
  1. Put the tomato paste, brown sugar, vinegar, mustard, cinnamon, salt, pepper, cloves and allspice into a small pan over low heat.
  2. Pour in 1/4 cup water.
  3. Whisk until smooth.
  4. Cook until the sugar melts and the ketchup is warmed through.
  5. Set aside and let the flavors blend at room temperature for 1 hour or in the refrigerator overnight.
Prepping and Drying the Potatoes
  1. Peel the potatoes.
  2. Cut each potato lengthwise into 4 long slices.
  3. Cut each slice into 4 strips.
  4. Place the strips into a bowl of cold water for at least 30 minutes or overnight in the fridge.
  5. Drain the potatoes through a colander and slide onto paper towels.
  6. Use more towels to blot the potatoes dry.
  7. The drier the potatoes, the more they will crisp.
The First Fry (Pre-Cooking)
  1. Heat a skillet over medium heat.
  2. Pour enough oil to come 1-inch up the side of the skillet.
  3. Use a candy thermometer to gauge the oil to 325 degrees.
  4. Place the fries into the oil and cook for 5 minutes.
  5. This step cooks the inside of the potatoes.
  6. Transfer the fries to a baking sheet lined with paper towels.
  7. These pre-cooked fries will keep in the fridge for several hours until you are ready to serve.
The Second Fry & Serving
  1. Raise the temperature of the oil to 375 degrees.
  2. Place the partially cooked fries in the oil.
  3. Cook until golden, about 5 minutes more.
  4. Transfer to a baking sheet lined with paper towels.
  5. Season with salt and pepper and serve with ketchup.

The Heart of the Table

There is a homey, generous joy in a big basket of fresh, hot fries set out to share — simple, universally loved, and impossible to resist. To go to the trouble of making them from scratch, double-fried and served with a real spiced ketchup, is a small act of care that turns everyday comfort food into something people genuinely marvel at.

The Art of the Host

A heavy pot and a thermometer are essential — the two fry temperatures are what make the method work, so it is worth measuring. Soak and dry the potatoes well, fry them once low to cook through and once hot to crisp, and never crowd the pot, which drops the temperature and leaves them limp. Salt the moment they come out, and make the ketchup ahead so it is ready.

Neighborly Grace

  • The Preparation: The double-fry method is actually made for getting ahead: do the first fry hours in advance and hold the par-cooked potatoes, then do the quick, hot second fry just before serving. The spiced ketchup keeps for days in the refrigerator, so with both done ahead, fresh, hot fries are only minutes away.
  • The Pour: An ice-cold lager or a crisp cider is the natural, casual match. For a non-alcoholic option, a cold cola or a sparkling lemonade suits the salty, crisp fries.
  • The Vibe: This is comfort food at its most joyful — pile the hot fries in a basket with the spiced ketchup for dunking and serve them the instant they're crisp. It is a simple, universally loved treat made for sharing, hot from the fryer.
