Cumin-Crusted Salmon with Tarragon Caper Sauce
This centerpiece dish demands attention by aggressively contrasting a deeply spiced, caramelized cumin and brown sugar crust against the delicate, buttery richness of a massive center-cut salmon fillet. The vibrant accompanying sauce—a sharp, herbaceous blend of fresh tarragon, briny capers, and tarragon vinegar—slices straight through the salmon’s natural fattiness, elevating the entire profile. Dropping the oven temperature immediately upon roasting ensures the fish remains impossibly tender and rare in the center while establishing a magnificent, shattering crust on top.

Neighborly Grace
- THE PRESENTATION: Do not flake or pre-portion this in the kitchen. Slide the massive, intact fillet onto an oversized white ceramic or weathered wood platter, heavily bordered with charred lemon halves, bright orange slices, and sprawling sprigs of fresh tarragon.
- THE POUR: The aggressive cumin crust and the herbaceous, creamy tarragon sauce demand a wine with profound structure and piercing acidity. A rigorously chilled, oak-aged White Burgundy or a vibrant, mineral-driven Chablis flawlessly balances the rich fish and sharp capers.
- THE VIBE: Sophisticated coastal twilight. This is the meal you present on the outdoor patio just as the sun sets, when the candles are lit, the ocean breeze picks up, and the evening transitions from a casual afternoon into a deeply elegant dinner party.
