Granola Waffles with Yogurt and Berries

Ingredients
For waffle batter dry ingredients
- 2 cups unbleached all-purpose flour
- 1⁄4 cup granulated sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon kosher salt
For waffle batter wet ingredients
- 1 1⁄2 cups buttermilk, room temperature
- 2 large eggs
- 4 tablespoons butter, 1⁄2 stick, melted
- 2 teaspoons vanilla extract

Instructions
- Preheat a waffle iron according to the manufacturer’s directions.
- Whisk together flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the buttermilk, eggs, melted butter, and vanilla extract in a smaller bowl.
- Pour the wet ingredients into the dry ingredients. Add the granola and stir everything together.
- Pour the batter into the preheated waffle iron and cook until crisp on the outside and fluffy on the inside.
- Top each waffle with a spoonful of yogurt, a handful of berries, and a drizzle of warm maple syrup.
To make the waffles in advance, cook them in the waffle iron and then cool to room temperature. Stack the waffles with parchment paper between each one. Place into a resealable plastic bag and freeze for up to one month. Reheat the waffles by placing on a rack in a preheated, 350° oven for 5 to 7 minutes.
