Ingredients
Cake - Dry Ingredients
- 3 cups unbleached all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
Cake - Wet Ingredients and Flavoring
- 1 cup unsalted butter, 2 sticks, room temperature
- 1 ¾ cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- zest from 3 Meyer lemons, about 2 tablespoons
- juice from 2 Meyer lemons, about ¼ cup
Lemon Cream Cheese Frosting
- 2 (8-ounce) packages cream cheese, room temperature
- 1 cup unsalted butter, 2 sticks, room temperature
- 5 cups confectioners’ sugar
- juice of 1 large Meyer lemon, about ¼ cup
- 1 teaspoon vanilla extract
- ⅛ teaspoon kosher salt

- strawberries, halved, cut side dipped in coarse black pepper
Instructions
Make cake batter
- Preheat your oven to 350°.
- Spray 2 (9-inch) square cake pans with vegetable oil spray. Line with parchment paper and then spray the paper.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl and set aside.
- Use an electric mixer on medium speed to combine 1 cup butter with the granulated sugar until fluffy, about 2 minutes.
- Add the eggs, one at a time.
- Mix in the vanilla.
- Add in 1/3 of the flour followed by 1/3 of the buttermilk. Continue mixing until all the flour and buttermilk are blended into the batter.
- Stir in the zest and juice.
- Divide the batter between the two pans.
- Gently drop the pans onto your work surface to smooth the batter and remove any extra air bubbles.
Bake, cool, and frost cake
- Bake until a tester inserted into the middle of the cakes comes out clean, about 25 to 28 minutes.
- Remove the cakes from the oven to a rack and cool for ten minutes.
- Use a knife to carefully loosen the edge of the cake from the pan.
- Place the rack on top of the cake pan and invert so that the cake comes out of the pan and onto the rack.
- Remove the parchment paper and cool completely, about 20 more minutes.
- For the frosting, use an electric mixer to combine the cream cheese with 1 cup butter until smooth and creamy.
- Stir in the confectioners’ sugar, adding about a cup at a time.
- Stir in the lemon juice, vanilla, and just a bit of salt.
Assemble and serve
- Set one of the cakes onto your cake platter. Generously frost the cake.
- Layer on the second cake. Slather frosting on the sides and the top of the cake.
- Serve a slice of cake with a scoop of sherbet and a peppered strawberry.
