Ingredients
- 4 slices bread, thickly sliced
- 1 cup pimento cheese
- 4 (1-ounce) slices swiss cheese
- 4 to 6 strips cooked bacon
- 4 (1-ounce) slices cheddar cheese
- 2 to 3 tablespoons fruit jam
- 2 to 3 tablespoons mayonnaise
- 2 tablespoons butter
Instructions
- Lay the bread slices on your work surface. Spread each slice with pimento cheese. Top two slices with swiss cheese first then bacon and cheddar. Dollop jam on the other two slices. Close the sandwiches.
- Spread mayonnaise on both sides of the sandwich.
- Heat the butter in a skillet over medium-high heat until it melts and is foamy.
- Place the sandwiches into the melted butter. Let cook for 30 seconds then flip and reduce the heat to medium. Cook until the underside is golden-brown, about 3 to 4 minutes. Flip the sandwich once more to cook the second side to golden, about 2 minutes more.
- Turn off the heat. Check to see if your cheese is melted enough. If not, cover the sandwiches with foil for a minute or two before serving.
- Transfer the sandwiches to your work surface and cut in half. (You can cut them in fourths if you are sharing.)
Any fruit jam will do for this recipe. We want just a hint of sweetness to compliment all that savory cheese. You can substitute with chutney or honey. If you are missing jam but have a few extra berries laying around in your fridge, simply place them in a pot with a bit of sugar and cook them down over medium heat to make your own.
