Pimento Cheese Deviled Eggs

Ingredients
- 6 large eggs
- 2 tablespoons mayonnaise
- 2 to 3 tablespoons pimento cheese
- 1 to 2 tablespoons sour cream
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon coarse black pepper
Instructions
- Arrange the eggs in a single layer in the bottom of a pot with lid. Cover with cold water. Place the lid on the pot and bring to a boil.
- Once the water starts boiling, turn off the heat and let sit for 11 minutes.
- Remove the lid and place the eggs in cold water. When the eggs are completely cool, peel each one.
- Cut each egg, horizontally, into halves. Place the egg halves on an egg platter.
- Carefully remove the yolks with a spoon and place them into a food processor. Add the mayonnaise, pimento cheese, and sour cream. Pulse to combine.
- If the mixture is too thick, add more sour cream. If it is too thin, add more pimento cheese!
- Taste and season with salt and pepper.
- Fill a resealable plastic bag with the cheese-yolk filling. Use your hands to wring the bag and push the filling into the bottom corner. Twist the air out of the bag. Snip off the corner and pipe the filling into the egg halves.
