Instructions
- Heat the olive oil over medium heat in a sauté pan with a lid.
- Add the onion and garlic and cook until soft, about 2 minutes.
- Stir in the paprika, cumin, and chili powder. Cook until you smell the seasonings, about 1 minute more.
- Pour in the tomatoes and tomato paste. Season with salt and pepper.
- Let the sauce simmer for 5 minutes. Use a spoon to make four wells in the sauce.
- Crack an egg into a bowl, being careful not to break the yolk, and then pour the egg into the well. Repeat with the remaining eggs. Season the eggs with salt and pepper. Cover the skillet with the lid and simmer until the eggs are set, about 3 to 4 minutes. The yolks will still jiggle a bit.
- Top the eggs and sauce with olives, cheese, and parsley.
- Serve the dish in the pan and use hunks of toasted bread for dipping.
