Green Eggs and Ham Scramble
Fresh eggs and milk are whisked until frothy, then scrambled in a warm skillet with melted butter, minced garlic, savory deli ham, and baby spinach leaves that wilt down into the scramble. Finished with a sprinkle of fresh curly parsley, it is a quick and satisfying skillet breakfast. It is a warm, customizable morning dish that is perfect for a comforting start to the day.

Ingredients
For scramble mix-ins
- 2 tablespoons butter
- 1 clove garlic, minced, about 1 teaspoon
- 2 ounces deli ham, cut into small pieces
- 2 cups fresh baby spinach leaves, chopped

Instructions
- Heat the butter in a skillet over medium heat. Once the butter is melted, stir in the garlic, and cook for 1 minute until you can smell garlic goodness. (Make sure you pay attention so the garlic doesn’t blacken and burn.) Add the ham and cook for 1 minute more. Add the spinach leaves and stir them around. After 1 or 2 minutes, the spinach will wilt down to about a fourth of the amount you started with.
- Whisk together the eggs and milk in a bowl until they are pale-yellow and frothy, about 2 minutes. Pour the eggs into the skillet. Use a wooden spoon to swirl the eggs around the add-ins. Season with salt and pepper. Cook until the eggs are just set. Remove the skillet from the heat and sprinkle with fresh parsley.
There’s lots of things to substitute here. Just remember to cook any ingredient that needs to be cooked before you pour in the eggs. Bacon and sausage are good subs for ham. Shallots, onion, and diced jalapeño peppers can replace garlic. All sorts of veggies will work in place of spinach. Don’t forget the cheese. Just any old bit of cheese on top of this scramble will add tons of flavor.
