Cheddar-Bacon Omelet

Ingredients
Egg Mixture and Butter
- 4 large eggs
- 2 tablespoons whole milk
- 2 tablespoons butter
- 1 large shallot, peeled and finely diced, about 2 tablespoons

- Whisk together the eggs and milk in a bowl until they are pale-yellow and frothy, about 2 minutes.
- Heat the butter in a skillet over medium-low heat. When the butter is melted, stir in the shallot and cook for one minute until you can smell onion goodness.
- Pour the eggs into the skillet. Reduce the heat to low. Let the eggs cook for about 20 seconds. Use a spatula to gently push the cooked outer rim of eggs toward the middle of the skillet, letting the uncooked egg at the center swirl to the outside. Let the eggs cook for another twenty seconds and then repeat, gently pushing the outermost cooked eggs toward the center and letting the uncooked eggs swirl outward. Continue to do this until no more liquid will flow to the outer edge.
- Season with salt and pepper. Sprinkle crumbled bacon on one half of the eggs. Sprinkle the cheese on top of the bacon. Sprinkle thyme on top of the cheese.
- Use a spatula to fold the plain side of eggs over the cheesy side to form a semi-circle. Press the edges together to seal in the filling. Continue cooking for 1 to 2 minutes until the center of the omelet is set (dry and not wiggly). Gently slide the omelet from the skillet to a plate and serve.
