Lemon Sunrise Waffles with Lemon Cream and Raspberry Syrup
Bright, vibrant, and incredibly fragrant, these waffles taste like pure morning sunshine. Processing fresh lemon zest with sugar creates a potent, aromatic citrus foundation that perfumes both the waffle and the whipped cream, while the tart raspberry syrup cuts through the richness beautifully.

Ingredients
For lemon cream
- zest from 2 large lemons, about 2 tablespoons
- 1⁄2 cups granulated sugar
- 2 cups whipping cream, chilled
For raspberry syrup
- 2 cup maples syrup
- 1 pint fresh raspberries, about 2 cups
For waffles
Instructions
- Place the lemon zest into the bowl of a food processor. Add 1⁄2 cup granulated sugar. Pulse to combine into a fine powder.
- Reserve 1⁄4 cup of the lemon-sugar for the waffle batter.
- Pour the remaining lemon-sugar blend into the bowl of an electric mixer fitted with the whisk attachment. Pour in the cream and whisk until stiff peaks form.
- Add the raspberries and maple syrup to a pot. Simmer the syrup over low heat until the raspberries begin to break down (you can help this along by using a potato masher), about 5 to 7 minutes. Strain the syrup through a colander into a bowl to remove the seeds. Return the syrup to the pot over low heat to keep warm.
- Preheat a waffle iron according to the manufacturer’s directions.
- Whisk together flour, remaining 1⁄4 cup lemon-sugar, baking powder and salt in a large bowl.
- Whisk together the buttermilk, eggs, melted butter, and vanilla extract in a smaller bowl.
- Pour the wet ingredients into the dry ingredients and combine.
- Pour the batter into the waffle iron and cook until crisp on the outside and fluffy on the inside.
- Top each waffle with a ladle of warm raspberry syrup and a dollop of lemon cream. Drizzle more syrup on top of the cream.
