Cheddar, Bacon, and Green Onion Waffles with Jalapeño-Maple Syrup and Glazed Eggs

Ingredients
For waffle batter base
- 2 cups unbleached all-purpose flour
- 1⁄4 cup granulated sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon kosher salt
- 1 1⁄2 cups buttermilk, room temperature
- 2 large eggs
- 4 tablespoons butter, 1⁄2 stick, melted
For waffle mix-ins
- 4 slices bacon, cooked and crumbled, about 1 cup
- 4 ounces sharp cheddar cheese, grated, about 1 cup
- 2 green onions, thinly sliced, about 2 tablespoons
For syrup
- 2 cups maple syrup
- 1 small jalapeño pepper, seeded, deveined, and finely diced, about 2 tablespoons
For eggs
Instructions
- Preheat a waffle iron according to the manufacturer’s directions.
- Whisk together flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the buttermilk, eggs, and melted butter in a smaller bowl.
- Pour the wet ingredients into the dry ingredients and combine. Stir in the crumbled bacon, cheese, and onions.
- Pour the maple syrup into a small pot over medium heat. Stir in the jalapeño and simmer for 5 minutes. Reduce the heat to low to keep the syrup warm.
- Melt 1 tablespoon butter over medium heat in a sauté pan with lid.
- Crack the eggs into the skillet, being careful not to break the yolks. Pour 1 tablespoon water around the eggs and cover with the lid. Cook until the yolks are just beginning to set and appear “glazed over,” about 3 to 4 minutes. Season with salt and pepper.
- Pour the batter into the waffle iron and cook until crisp on the outside and fluffy on the inside.
- Top each waffle with a dousing of warm jalapeño syrup and a glazed egg on top. Garnish with more slices of green onion.
Depending on your palate’s spice tolerance, feel free to use more or less jalapeño in the syrup. During the summer, you’ll find all sorts of varieties of peppers in the market. Experimenting is much of the fun, and this recipe is just perfect for it. Substituting with other cheeses and proteins is also fun.
