Pan Prep and Carrot Ring Wet Ingredients
- 1 tablespoon olive oil
- 2 tablespoons breadcrumbs
- 4 large eggs, separated
- ¾ pound butter, 3 sticks, room temperature
- 1 cup granulated sugar
- 6 large carrots, peeled and grated, about 3 cups
- 2 tablespoons milk
- juice of 1 medium lemon, about 2 tablespoons

Instructions
Make batter
- Preheat your oven to 350°.
- Brush a 10-inch Bundt or tube pan with olive oil.
- Dust the bottom and sides of the pan evenly with breadcrumbs.
- Use an electric mixer fitted with the whisk attachment to beat the egg whites until stiff peaks form. Transfer the egg whites to another bowl and set aside.
- Use the electric mixer fitted with a paddle attachment to mix the butter and the sugar until creamy.
- Stir in the egg yolks one at time.
- Add carrots, milk, and lemon juice and beat until well mixed.
- Add salt, baking powder, baking soda, and flour and beat again until well mixed.
- Remove the bowl and use a spatula to fold in the beaten egg whites until no white streaks remain. Pour the batter into the prepared pan.
Bake and serve
- Bake until golden brown and the top springs back when touched, about one hour.
- Remove from the oven and let cool for about 5 minutes.
- Use a knife to loosen the sides of the cake and remove it from the pan, turning it, bottom side up, onto a serving platter.
- Warm the onions and peas in a saucepot over medium heat. Spoon the veggies into the center of the mold and over the sides.
- Cut the carrot ring into slices and serve warm.
