- ½ cup mayonnaise
- ½ cup heavy cream
- ½ medium lemon, juiced, about 2 teaspoons
- 2 teaspoons tarragon wine vinegar
- 1 teaspoon kosher salt
- ½ teaspoon ground white pepper
Instructions
- Preheat your oven to 425°.
- Place the sweet potatoes onto a baking sheet. Drizzle with olive oil. Stir together brown sugar, garlic powder, onion powder, chili powder, salt, and pepper. Sprinkle this seasoning blend all over the potatoes. Use your hands to evenly coat the potatoes.
- Bake until the potatoes begin to soften and turn golden brown, about 10 minutes. Remove the baking sheet from the oven. Use a spatula to flip the potatoes. Return to the oven and bake until the potatoes are crisp and browned, about 15 to 20 minutes more depending on the size of your spears.
- Meanwhile, add the blue cheese, mayonnaise, cream, lemon juice, and vinegar into the bowl of a food processor. Pulse a couple of times just to combine. The dressing will be rustic and chunky. Alternatively, you can stir everything together with a wooden spoon. Season with salt and pepper.
