Perfectly Grilled Steaks with Board Sauce(s)

Ingredients
For the steak and Board Sauce 1 (Rosemary Butter)
- 1 (12-ounce) ribeye steak, cut 2 inches thick
- 1 teaspoon kosher salt
- 1 teaspoon coarse black pepper
- 2 cloves garlic, grated
- 4 rosemary sprigs
- 4 thyme sprigs
- 1 tablespoon butter, cut into tiny pieces
For Board Sauce 2 (Ginger-Soy)
- 3 tablespoons olive oil
- 2 cloves garlic, grated
- 1 (1-inch) piece ginger, peeled and grated
- 2 tablespoons soy sauce
- 1 tablespoon honey
For Board Sauce 3 (Herb-Garlic)
Instructions
- Let the steak rest for 30 minutes at room temperature before cooking.
- Heat an outdoor grill (or indoor grill pan) to high heat. Season steak with salt and pepper.
- Prepare your chosen Board Sauce: Add the garlic, herbs/spices, and butter to your board. Drizzle with the wet ingredients (olive oil, soy sauce, or vinegar) and season with salt and pepper. Use the back of a spoon to mush everything around on the board.
- Lay the steak on the grill and cook (without moving it around) until you see a browned edge forming on the bottom, about 3 to 4 minutes. Flip and continue cooking for about 3 to 4 minutes more. Test for doneness. Medium-rare works best for this steak.
- Use tongs to remove your hot steak from the grill and transfer it directly to the prepared board. After a couple of seconds, use the tongs to flip the steak so that the seasonings coat both sides. Cover with foil and let rest for 5 minutes before slicing into strips.
