Ingredients
For the chicken and veggies
- 1 small (2 Β½- to 3 Β½-pound) chicken
- 2 to 3 tablespoons olive oil
- 1 large russet potato, peeled and diced into Β½-inch pieces, about 2 cups
- 1 large onion, peeled and diced into Β½-inch pieces, about 1 Β½ cups
- 2 to 3 celery ribs, sliced, about 1 cup
- 2 to 3 large carrots, peeled and sliced, about 1 cup
For the soup aromatics and seasonings
- 2 small jalapeΓ±o peppers, seeded, deveined, and diced, about ΒΌ cup
- 6 to 8 garlic cloves, peeled and thinly sliced, about ΒΌ cup
- 3 (1-inch) pieces fresh turmeric, peeled and sliced, about 3 tablespoons
- 2 teaspoons kosher salt
- 1 teaspoon coarse black pepper
- 1 teaspoon Tuscan spice blend (see note below)
- 2 tablespoons fresh basil, chopped
Instructions
Make the chicken and broth
- Rinse the chicken and discard any giblets hidden in the cavity.
- Submerge the bird into a pot of boiling salted water and cook until the meat pulls away from the bone, about 45 minutes.
- Remove the pot from the heat. Use two slotted spoons to transfer the chicken to a cutting board to cool. Carefully strain broth through a colander into a large bowl or pitcher.
Cook the vegetables and soup
- Coat the bottom of the pot with olive oil.
- Add the vegetables and cook over medium-high heat until they begin to soften and turn golden, about 20 minutes.
- Pour the strained broth back into the pot.
- Season with salt, pepper, and the spice blend.
- Simmer the soup until the vegetables are very soft, about 20 minutes. Remove the pot from the heat, and cool the soup to room temperature.
Finish and shred chicken
- Use an immersion blender, food processor, or blender to make the soup creamy. Soft potatoes will create a texture much like creamed soup. If you want an even creamier texture, stir in a cup of half-and-half to the pot.
- While the soup is simmering, remove the meat from the bones of the chicken. Shred the chicken meat with two forks. Transfer the shredded chicken to the soup.
- Stir, taste, and adjust the seasonings.
- Garnish with fresh basil.
