Hot Garlicky Wings
Achieving true restaurant-quality wings at home requires abandoning the oven and committing to a proper, aggressive shallow fry in a heavy cast-iron skillet. By heavily seasoning the raw wings with dehydrated garlic and onion before frying, we create a deeply savory crust that holds up magnificently when drenched in sauce. The crucial final step—simmering the violently crispy wings directly in the violently hot, butter-mounted, fresh-garlic sauce—ensures the meat is perfectly cooked while forcing the intense flavor into every single crevice.

Ingredients
For the wings:
- 12 whole chicken wings
- 1 tablespoon dried minced onion
- 1 tablespoon dried minced garlic
- 1 teaspoon kosher salt
- oil for frying
For the sauce:
- ½ cup unsalted butter, one stick
- ½ cup hot pepper sauce
- 1 tablespoon white wine vinegar
- 1 tablespoon Worcestershire sauce
- 4 large cloves garlic, peeled and minced, about 2 tablespoons
For the extras:
- crudités (celery and carrot sticks)
- blue cheese salad dressing
Instructions
For the wings:
- Cut the tips from the wings and reserve for use in stock.
- Cut the wings into two parts (drumettes and flats) and place on a platter or baking sheet.
- Season the wings with the spices.
- Pour enough vegetable or peanut oil to come 1/3 up the side of a deep sauté pan or cast-iron skillet, and heat over medium-high heat. The oil is hot enough when it spits back if you add a drop of water. Cook the wings in batches in the hot oil, turning once, until golden brown. (Note: A mesh splatter guard is a good thing to have for this process, as these wings will splatter!)
- Drain the wings on a rack placed over paper towels.
For the sauce:
- Melt the butter in a large skillet over low heat.
- Stir in the hot pepper sauce, vinegar, Worcestershire sauce, and garlic.
- Simmer to blend the flavors, about 5 minutes.
- Add the wings to the sauce and toss to coat.
- Reduce the heat to low and continue to simmer until the wings are completely cooked, about 10 minutes.
- Serve the wings with crudités and blue cheese dressing for dipping.
