Barbecue Salmon with Chili Oil and Buttered Pecans
This recipe thrives on an aggressive layering of intense, contradictory flavors, contrasting the rich fattiness of roasted salmon fillets against a fiercely complex glaze of barbecue sauce, chili sauce, bright orange zest, and searing crispy chili oil. By partially roasting the fish before applying the glaze, the sugars caramelize rapidly under the intense heat without overcooking the rare, delicate center of the salmon. Crowning the fiery, deeply lacquered fish with butter-toasted brown sugar pecans instantly introduces a brilliant, shattering crunch that perfectly tempers the aggressive heat of the chili oil.
Serves: 4 | Total Time: 30 minutes till it’s ready
Ingredients
For the salmon prep
- 4 (6-ounce) salmon fillets
- juice from ½ lemon, about 1 tablespoon
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon coarse black pepper
For the barbecue glaze
- ¼ cup barbecue sauce
- ¼ cup chili sauce
- 1 tablespoon crispy chili oil
- zest from 1 medium orange, about 1 tablespoon
- juice from 1 medium orange, about 3 tablespoons
For pecans
- 2 tablespoons butter
- 1 tablespoon brown sugar
- ½ cup pecans, chopped
Instructions
- Preheat the oven to 375°.
- Place the salmon fillets (skin side down) into a baking dish. Season with lemon juice, olive oil, salt, and pepper. Bake for 15 minutes.
- Stir together the barbecue sauce, chili sauce, crispy chili oil, orange zest, and juice.
- Remove the salmon from the oven and spoon the sauce over the fillets. Return to the oven and bake for 5 to 8 minutes more. You want the center of the fillets to be rare, about 120°.
- Heat the butter in a skillet over medium heat.
- Stir in the brown sugar until melted.
- Toss in the pecans and cook until golden, about 2 minutes. Remove the skillet from the heat.
- Serve the barbecue salmon fillets with a spoonful of sugared pecans.

Serving individual, heavily glazed salmon fillets crowned with sugared pecans creates an atmosphere of tailored, vibrant hospitality. It’s an incredibly dynamic, high-impact plate that immediately sparks conversation over the unexpected collision of fiery chili oil, deep barbecue smoke, and sweet, buttery crunch.
Neighborly Grace
- THE PRESENTATION: Transfer the heavily glazed, dark red fillets to a wide, shallow serving platter, ensuring any thick sauce left in the baking dish is spooned generously over the top. Immediately shower the blazing hot fish with a heavy spoonful of the buttery, caramelized brown sugar pecans, allowing them to fuse with the sticky glaze.
- THE POUR: The intense heat of the crispy chili oil and the deep sweetness of the barbecue sauce require a wine with substantial fruit and sharp acidity. An intensely chilled, off-dry Riesling or a vibrant, fruit-forward Pinot Noir effortlessly manages the heat and perfectly complements the smoky, caramelized salmon.
- THE VIBE: Energetic, bold coastal evenings. This is the meal you execute when you want to surprise your guests with aggressive, unforgettable flavors on a lively Saturday night, surrounded by loud laughter and icy wine on the patio.
