- juice of 1 medium lemon, about 3 tablespoons
- ½ pound bacon, about 6 to 8 slices, chopped
- ¼ cup dry sherry
- ½ cup heavy cream
For grits base

Instructions
Cook the shrimp and bacon
- Place the shrimp into a bowl.
- Add the onion powder, garlic powder, paprika, chili flakes, cayenne pepper, and lemon zest.
- Toss shrimp with seasoning to coat.
- Sprinkle with lemon juice.
- Place the bacon in a skillet and heat to medium.
- Cook the bacon until crisp, about 4 to 5 minutes.
- Use a slotted spoon to transfer the bacon to a paper towel-lined plate.
- Cook the shrimp in the bacon grease until it’s just pink on the outside and not cooked all the way through, just a couple minutes.
- Use a slotted spoon to transfer the shrimp to a platter.
Make the sauce
- Reduce the heat to medium low.
- Pour in the sherry.
- Cook for 2 minutes.
- Pour in ½ cup heavy cream.
- Stir to thicken.
- Set the sauce aside while you cook the grits.
Make the grits and assemble
- Bring chicken stock and 1 ½ cups heavy cream to a boil over medium-high heat.
- Stir in the grits and salt.
- Cover and reduce the heat to low. Cook until the grits thicken, about 20 to 25 minutes, stirring along the way.
- Stir in the butter, cheese, and steak seasoning.
- Return the shrimp to the sauce.
- Cook over medium-low heat until the shrimp are opaque.
- Serve a spoonful of the grits in a shallow bowl. Top with shrimp and sauce. Sprinkle with bacon and garnish with finely chopped green onions, chives, and parsley.
