Glazed Donuts with Sprinkles

Ingredients
For donuts dough
- 2 large eggs, beaten
- ½ cup milk, just warmed
- 2 tablespoons butter, melted
- ½ cup granulated sugar
- ¼ teaspoon kosher salt
- 1 ½ teaspoons maple extract
- 1 ½ teaspoons instant yeast
- 3 ½ cups cake flour
For frying
- vegetable oil for frying
For glaze
Instructions
Make dough
- Mix the eggs, ½ cup milk, and butter.
- Stir in the sugar, salt, maple extract, and yeast.
- Add the flour to the bowl of an electric mixer fitted with a dough hook.
- Pour in the wet ingredients and mix until the dough begins to pull away from the sides of the bowl.
- Dump the (pretty sticky) dough onto a floured surface and knead a couple of turns until you form it into a ball.
- Place the ball into a bowl sprayed with vegetable oil spray.
- Roll the dough around in the bowl to coat all sides.
- Cover the bowl with a clean towel and let rise in a warm place until doubled in size, about 1 hour (or up to 2 hours if you like).
Shape and rise
- Roll out the dough and use a donut cutter (or biscuit round) to cut out the donuts and holes.
- Gather up the scraps and re-roll to use up the remaining dough.
- Place onto baking sheets lined with parchment paper.
- Place in a warm place and let rise until doubled in size again, about another 30 minutes.
Fry and glaze
- Heat oil to 350° in a deep pot or Dutch oven. Only fill the pot one-third up the sides so that when the oil bubbles up, it won’t overflow.
- Fry the donuts in batches. Don’t overcrowd the oil. We want them to swim in the oil … not drown! Fry until the donuts are golden on one side, and then carefully flip so that they are golden on both sides, about 2 to 3 minutes.
- Transfer the donuts to a rack set over paper toweling to drain.
- Whisk together the confectioners’ sugar, ¼ cup milk, and vanilla.
- Dip one side of the donuts into the glaze.
- Return to the rack and douse with sprinkles.
Thing to Note:
You can use active yeast. Just activate the yeast in ¼ cup warm water. Then combine it with ¼ cup warm milk and continue with the recipe.
