Gooey Maple Pecan Rolls

- 4 cups all-purpose flour
- ½ cup old-fashioned rolled oats
- 4 tablespoons butter, cut into pieces
- 1 teaspoon kosher salt
- 3 large eggs, beaten
- 2 teaspoons vanilla extract
For glaze
- 1 cup pure maple syrup
- ½ cup butter, 1 stick
- 1 cup brown sugar
For filling
- 1 cup pecans
- ½ cup brown sugar
- 2 teaspoons ground cinnamon
- 6 tablespoons butter, chilled and cut into pieces, ¾ stick
- ¼ cup half-and-half
Instructions
Make dough
- Stir yeast and 1 teaspoon of the sugar into the milk in a small bowl. Wait until the liquid is foamy, about 10 minutes.
- Add the flour, oats, remaining sugar, 4 tablespoons butter, salt, eggs, and vanilla into the bowl of an electric mixer fitted with a paddle attachment. Stir to combine.
- Slowly pour in the foamy milk.
- When the dough is combined, switch the paddle to a dough hook. Continue mixing until the dough wraps around the hook. Then continue mixing until the dough forms an elastic ball.
- Transfer the dough to a floured surface and knead several times. Form the dough into a ball and set it in a bowl sprayed with vegetable oil spray.
- Roll the dough around in the bowl to coat all sides.
- Cover with a clean dish towel and set in a warm place to double in size, about 1 hour.
Make glaze and filling
- Heat the maple syrup, ½ cup butter, and 1 cup brown sugar in a pot over medium heat until the butter melts and the sugar dissolves.
- Pour this mixture into the bottom of a glass baking dish, coating the bottom of the dish completely.
- Add the pecans, ½ cup brown sugar, and cinnamon into the bowl of a food processor. Pulse until the pecans are finely chopped.
- Add 6 tablespoons butter and pulse until the mixture resembles coarse crumbs.
Shape rolls
- Preheat your oven to 375°.
- Transfer the dough to a floured surface. The dough will be sticky. Coat with flour and knead several times until the dough is smooth and elastic.
- Form the dough into a ball, place in a bowl, cover with a clean dish towel, and let rest on your work surface for 10 more minutes.
- Roll out the dough to form a 12 x 18-inch rectangle about ¼-inch thick.
- Sprinkle the pecan filling over the dough, leaving about a 1-inch border.
- Roll the dough around the filling from the long side to form a log.
- Cut the log into 12 (2-inch thick) slices.
- Lay each slice in the bottom of the baking dish.
- Allow the rolls to rise about 1 hour or in the refrigerator overnight.
Bake and finish
- Brush the rolls with half-and-half.
- Bake the rolls for 20 to 25 minutes or until the tops are golden and the syrup is bubbling.
- Remove the pans from the oven.
- Place a baking sheet over the top of the glass pan. Invert the baking dish so that the rolls fall onto the baking sheet and the syrup drips overtop. (Use potholders!)
- Serve warm.
