Italian Butter Cookies

Ingredients
For dry ingredients
- 2 cups unbleached all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
For wet ingredients
- 1 cup unsalted butter, room temperature, 2 sticks
- 1 cup confectioners’ sugar
- 2 large egg yolks
- 1 teaspoon vanilla
For toppings
- 1 cup semisweet chocolate chips

Instructions
Make dough
- Preheat your oven to 350°.
- Line two baking sheets with parchment paper.
- Whisk together the flour, baking powder, and salt in a bowl.
- Use an electric mixer to beat the butter until it is fluffy, about 2 minutes.
- Stop the machine and add the confectioners’ sugar. Mix in the sugar on low speed, working up to medium.
- Stir in the egg yolks, one at a time.
- Stir in the vanilla.
- Add the flour in 3 additions.
Pipe and bake
- Spoon about a third of the dough into a pastry bag fitted with a large star tip.
- Pipe the batter onto the baking sheet in about 2-inch lengths about 2 inches apart. Continue until all of the dough is piped.
- Bake until the cookies are firm, about 12 to 14 minutes.
- Transfer to a rack and cool.
Decorate
Thing to Note:
For true Italian butter cookies, you should use the star tip to pipe. But for fun, you can use other tips to create your favorite shapes. If you’re in a hurry, use an ice cream scoop to mound cookies onto the baking sheet and flatten to form circles.
