Makes: dough for two crusts | Total Time: 10 minutes to prep, plus chilling
Ingredients
Instructions
- Cut the butter into tiny pieces and return it to the refrigerator.
- Place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade and pulse a few times to mix.
- Add the butter and shortening.
- Pulse 8 to 12 times, until the butter is the size of peas.
- With the machine running, pour the vodka and 2 to 3 tablespoons of ice water down the feed tube and pulse the machine until the dough begins to form a ball.
- Dump out onto a floured board and roll into two disks.
- Wrap each in plastic wrap and refrigerate for 30 minutes.
- Roll out the crusts as needed for your pie.
If your pie crust is too crumbly to roll, add a bit more ice water. If it’s a little sticky, mix in more flour. Another Thing to Note: Adding a little bit of vodka to the pie dough adds a bit more liquid while not overworking the gluten. This creates a really tender, flaky crust. Don’t worry about the alcohol—it bakes out and doesn’t add any taste.
