Ingredients

  • 4 Portobello mushroom caps, stems and gills removed
  • 3 tablespoons olive oil, divided
  • 1 teaspoon kosher salt
  • 1 teaspoon coarse ground black pepper
  • 2 ounces Monterrey Jack cheese, grated, about ½ cup
  • 4 to 5 green onions, thinly sliced, about ½ cup
  • 1 medium red or green bell pepper, seeded, veins removed, diced, about ½ cup
  • 1 medium jalapeño pepper, seeded, veins removed, about 1 tablespoon
  • 8 extra large egg whites
  • 1 whole egg
  • 2 large, ripe plum tomatoes, diced, about ½ pound
  • Chopped fresh thyme
  • Hot pepper sauce

Instructions

  1. Heat a grill pan over medium high heat. Drizzle both sides of the mushrooms with 2 tablespoons olive oil. Grill, cap side down, until just tender, about 3 minutes. Turn and continue cooking for 3 minutes more. Remove the mushrooms to a platter. Season the insides of the mushrooms with salt and pepper. Sprinkle cheese into the mushroom. Tent with aluminum foil to keep warm.
  2. Pour the remaining olive oil into a nonstick skillet over medium high heat. Add the onions and peppers and cook until soft, about 3 to 5 minutes. Beat the egg whites and whole egg in a bowl with a fork. Reduce the heat to medium-low. Pour the eggs into the skillet. Cook the eggs, stirring gently, until soft and tender, about 3 to 5 minutes more.
  3. Spoon the eggs into the mushrooms, on top of the cheese. Season with salt and pepper. Garnish with chopped tomatoes and fresh thyme. Pass the hot pepper sauce!
