A great substitute for oranges in this recipe is Meyer lemons, which are sweet and tart at the same time. The skin is thinner than regular lemons, so be careful when you are zesting. You don't want white membrane as part of your sherbet. Meyer lemons are popping up in grocery stores and fresh markets. If you can't find them, substitute with half lemon juice and half tangerine or orange juice.
