The Strategy:

An artichoke is the bud of a flower. The flower in this case is a thistle. It has tough leaves on the outside with small thorns. These leaves cover the inside fuzzy middle, called the “choke,” that sits atop the prize of the veggie, the “heart.” The choke is not edible except in baby artichokes. You eat an artichoke from the outside-in, pulling the (trimmed) leaves through your teeth. Then you work your way through the leaves to that innermost delectable bite—the heart—and all the effort is well worth it. Here are a couple things you can do with artichokes.

Place the dipping sauce in an individual, small artisanal bowl right beside it so guests are not forced to pass or share the sauce. Always provide a discard bowl for the scraped leaves.
