Breakfast Pizzas
Crispy flour tortillas serve as the base for these unique breakfast pizzas, loaded with sautéed baby potatoes, diced poblano pepper, onion, and savory breakfast sausage. Baked with sharp cheddar cheese until melted and bubbly, they are finished with scrambled or fried eggs, a drizzle of sweet honey, and hot pepper sauce. They are a fun, easy-to-assemble breakfast that is perfect for a cozy morning meal.

Ingredients
Potato-Sausage Topping
- 1 tablespoon olive oil
- 4 to 6 baby potatoes, cooked, diced into 1⁄4-inch pieces, about 1 cup
- 1⁄2 large poblano pepper, seeded and deveined, diced into 1⁄4-inch pieces, about 1⁄2 cup
- 1⁄2 small onion, peeled and diced into 1⁄4-inch pieces, about 1⁄2 cup
- 4 ounces breakfast sausage, broken into small clumps, about 1 cup
- 1 teaspoon kosher salt
- 1⁄2 teaspoon coarse black pepper
Pizza Base and Finishes
Instructions
- Preheat your oven to 375°.
- Coat the bottom of a skillet with olive oil.
- Add the diced potatoes, pepper, onion, and sausage to the skillet and cook over medium-high heat until the potatoes are golden and the sausage is browned, about 5 to 8 minutes. Season with salt and pepper.
- Place two tortillas on a baking sheet coated with vegetable oil spray. Place in the oven and cook for 2 to 3 minutes until crisp.
- Cover the tortillas with half of the cheese, layer the potato-veggie mixture over the top, and then finish with the remaining cheese.
- Put the baking sheet back into the oven and cook until the cheese melts, about 3 to 5 minutes more.
- Drizzle with a bit of honey and a few dashes of hot pepper sauce.
- Cut into slices and top the pizza with your choice of eggs.
The thing about the potatoes is you can use any leftover potato you have—baked, roasted, or even smashed. If you don’t have any leftover potatoes, simply take a couple of small potatoes, pierce them with a fork, and place them into a microwave-safe bowl. Add a tablespoon or two of water, cover with plastic wrap, and microwave on high for several minutes to partially cook the potatoes. You want to be able to pierce them easily with a fork.
