Instructions
Roast the garlic
- Preheat the oven to 375°.
- Cut the tops from the garlic heads.
- Sprinkle with olive oil, salt and pepper.
- Wrap in aluminum foil and roast until the garlic cloves are soft, golden and jumping out of their skins, about 40 to 50 minutes.
Boil the potatoes
- Cook the potatoes in boiling, salted water until tender, about 10 to 15 minutes.
- Drain the potatoes and return to the pan.
Mash and assemble
- Add the butter, cream, cheese and sour cream.
- Remove the garlic from the foil and squeeze the garlic cloves into the potatoes. Use an electric mixer to cream the potatoes and mix all the ingredients together.
- Season with salt and pepper.
