Ingredients
- 1 pint cherry tomatoes
- 3 cloves garlic, peeled and sliced
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon coarse black pepper
- 1 tablespoon olive oil
Shrooms
- 6 to 8 anchovies packed in oil
- 2 tablespoons olive oil
- 2 large Portobello mushroom caps, stems and gills removed, sliced
Pizza
- Semolina flour
- 1 prepared pizza dough
- 8 ounces fresh mozzarella, sliced
- 2 ounces grated Parmesan cheese, about ½ cup
Instructions
- Preheat the oven to 375°.
- Place the tomatoes into a shallow baking dish.
- Add the garlic.
- Season with oregano, salt and pepper.
- Drizzle with olive oil and toss.
- Bake until the tomatoes begin to burst and the garlic is golden, about 15 to 20 minutes.
- Remove the dish from the oven.
Shrooms
- Heat the olive oil and anchovies in a skillet over medium heat until the anchovies dissolve, about 2 minutes. Increase the heat to medium high.
- Add the mushrooms to the skillet.
- Cook until the mushrooms begin to soften and all of the liquid is absorbed, about 2 minutes.
- Season with salt and pepper.
Pizza
- Preheat the oven to 500°.
- Place a pizza stone into the oven and heat for at least 30 minutes.
- Dust a pizza paddle with semolina flour.
- Roll out the pizza dough on the paddle.
- Top the pizza dough with mozzarella cheese. Use your hands to break up the tomatoes and lay them and the garlic pieces on top of the cheese.
- Top the tomatoes with the shrooms.
- Sprinkle Parmesan cheese over all.
- Transfer the pizza from the paddle to the hot stone.
- Bake the pizza until the crust is golden and the topping bubbles, about 15 to 20 minutes.
- Remove the pizza with the paddle and cut into wedges.
