Game Day Pizza

Serves 6-8

Ingredients

  • 1 pint cherry tomatoes
  • 3 cloves garlic, peeled and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon coarse black pepper
  • 1 tablespoon olive oil
  • 6 to 8 anchovies packed in oil
  • 2 tablespoons olive oil
  • 2 large Portobello mushroom caps, stems and gills removed, sliced
  • Semolina flour
  • 1 prepared pizza dough
  • 8 ounces fresh mozzarella, sliced
  • 2 ounces grated Parmesan cheese, about ½ cup

Instructions

  1. Preheat the oven to 375°. Place the tomatoes into a shallow baking dish. Add the garlic. Season with oregano, salt and pepper. Drizzle with olive oil and toss. Bake until the tomatoes begin to burst and the garlic is golden, about 15 to 20 minutes. Remove the dish from the oven.
  2. Shrooms Heat the olive oil and anchovies in a skillet over medium heat until the anchovies dissolve, about 2 minutes.
  3. Increase the heat to medium high. Add the mushrooms to the skillet. Cook until the mushrooms begin to soften and all of the liquid is absorbed, about 2 minutes. Season with salt and pepper.
  4. Pizza Preheat the oven to 500°. Place a pizza stone into the oven and heat for at least 30 minutes. Dust a pizza paddle with semolina flour. Roll out the pizza dough on the paddle. Top the pizza dough with mozzarella cheese.
  5. Use your hands to break up the tomatoes and lay them and the garlic pieces on top of the cheese. Top the tomatoes with the shrooms. Sprinkle Parmesan cheese over all. Transfer the pizza from the paddle to the hot stone.
  6. Bake the pizza until the crust is golden and the topping bubbles, about 15 to 20 minutes. Remove the pizza with the paddle and cut into wedges.
