Make the topping
- Toss the strawberries with balsamic vinegar and pepper in a small bowl.
- Stir together the ricotta cheese, maple syrup and mint in another small bowl until smooth.
Fry the French toast
- Heat vegetable oil in a large skillet about 1-inch deep, over medium-high heat. Remember the oil will bubble up, so don't over-fill the pan.
- Whisk together the eggs, cream, cinnamon, nutmeg and ginger in a shallow bowl or pie pan. Submerge a bread slice into the egg until well coated.
- Shake off any excess.
- Place the soaked bread into the hot oil.
- Cook the toast in the oil until golden on one side, about 2 to 3 minutes.
- Flip and fry until the second side is golden, about 2 to 3 minutes more.
- Transfer to a paper towel lined baking sheet. Repeat with remaining bread slices, frying just a few at a time.
Top and serve
- Top each toast with a slather of ricotta cheese and a dollop of strawberries.
