Grilled Corn Salad With Lemon-Basil Vinaigrette
When I prepare corn, I purposefully make more than I need (surprise, surprise!) because I like to use the leftovers in other veggie side dishes. Remove the kernels from the cob and store them in an airtight container. When you are ready, you can sautรฉ them in oil with other veggies a la succotash. You can also toast them in a fry pan and blend them with black beans, tomatoes, chilis, and cilantro for a yummy salsaโor you can turn them into a delicious salad, like this one.
