The secret to achieving a luxurious, velvety texture without relying on heavy flour roux or cornstarch slurries lies entirely in steps 2 through 5. By steeping the bare, broken cobs in the heavy cream and then meticulously scraping the residual pulp, we extract the "corn milk." This natural, incredibly flavorful corn starch acts as the perfect thickening agent for the cream sauce, resulting in a side dish that is impossibly rich but fundamentally tastes of pure, concentrated sweet corn.

Aromatics and Seasonings
- 4 slices bacon, diced
- 1 small yellow onion, peeled and diced, about ½ cup
- 1 small red bell pepper, seeded, deveined, and diced, about ½ cup
- 1 medium jalapeño pepper, seeded, deveined, and finely diced, about 1 tablespoon
- 4 large garlic cloves, peeled and minced
- 2 to 3 green onions, thinly sliced
- 1 teaspoon coarse black pepper
Instructions
Make corn and cream
- Cut the kernels from the cobs into a bowl.
- Break the bare cobs in half and add to a deep pot. Pour in the cream and season with 1 teaspoon of salt.
- Cover the pot and cook over medium-high heat until the cream begins to boil.
- Turn off the heat and steep the cobs in the cream for 1 hour.
- Use a spoon to scrape the pulp from each cob piece and add back to the cream. Discard cobs.
Cook aromatics and simmer
- Cook the bacon in a large sauté pan over medium heat until crisp. Remove the bacon and rest on paper towels to drain.
- Add the onion and peppers and cook for 2 to 3 minutes.
- Stir in the garlic and cook for 1 minute more.
- Add the corn and ¾ of the cream.
- Reduce the heat to low and simmer until the corn is soft and tender, about 20 to 30 minutes.
- Stir in the rest of the cream and half of the green onions and bacon. Season with salt and pepper.
- Garnish with the remaining green onions and bacon on top!
