Ingredients
Mushroom and Bacon Filling
- 1 tablespoon butter
- 4 ounces mushrooms, finely diced, about 1 cup
- 1 teaspoon kosher salt
- 1 teaspoon coarse black pepper
- 1 tablespoon chopped fresh thyme
- 4 slices bacon, cooked and finely diced

Instructions
- Preheat the oven to 375°.
- Heat the butter over medium-high heat.
- Add the mushrooms. Season with some salt and pepper. Sprinkle with thyme. Cook until golden, about 2 to 3 minutes.
- Place the bacon into a bowl. Add the ricotta, Parmesan, and egg yolk and stir. Fold in the mushrooms. Season with salt and pepper.
- Drizzle a baking sheet with 1 tablespoon olive oil.
- Gently open the petals of one blossom. Use a spoon (or pastry bag) to place some of the filling into the center of the blossom. Close the petals over the filling and place onto the baking sheet. Repeat with the remaining blossoms. Drizzle with olive oil.
- Bake until the filling is melted and warmed through, about 8 to 10 minutes. Serve warm.
