Cabbage and Veggies
- 1 (2-pound) head savoy cabbage
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 medium yellow onion, diced, about 1 ½ cups
- 1 medium fennel bulb, diced, about 1 cup
Apples, Liquids and Seasonings
Instructions
- Cut the cabbage into thin slices.
- Melt the butter with the olive oil in a large sauté pan with lid over medium heat.
- Add the onion and fennel and cook until soft, about 5 minutes.
- Add the cabbage and cook for 10 minutes.
- Stir in the apples.
- Pour in the cider.
- Cook until very little liquid remains, about 5 minutes more.
- Add the chicken stock and season with salt and pepper, cardamom, and cinnamon.
- Cover and simmer until soft, about 30 minutes.
