Smoked Salmon Toasts with Scallion-Caper Cream Cheese, Pickled Radishes, and Jammy Eggs

Ingredients
For pickled radishes
- 1 bunch of radishes, about 10
- 1⁄2 cup apple cider vinegar, mixed with 1 cup warm water
- 1 tablespoon granulated sugar
- 1 1⁄2 teaspoons kosher salt
For cream cheese
- 4 ounces cream cheese, room temperature, about 1⁄2 cup
- 2 tablespoons sour cream
- 2 green onions, thinly sliced, about 2 tablespoons
- 2 tablespoons capers, drained
For toasts
Instructions
- Slice the radishes into thin circles. In a bowl, stir together 1 cup warm water, cider vinegar, sugar, and salt. Add the radishes to the bowl and let them marinate for at least 30 minutes, or up to several days, in the fridge.
- Combine the cream cheese, sour cream, green onions, and capers in a bowl.
- Toast the bread. Spread each slice with a slather of the veggie-cream. Add slices of salmon. Remove the radishes from the liquid and place several on top of the salmon.
- Bring water to a boil in a pot.
- Use a spoon to place each egg into the boiling water. Boil the eggs for 6 1⁄2 minutes.
- Remove the eggs from the hot water and place into an ice water bath for at least 2 minutes.
- Peel the eggs and cut in half. The centers will be just set. Slice the eggs and place them on top of the salmon. Season with salt and pepper.
