Instructions
Roast and prep chicken
- Preheat your oven to 350°.
- Place the chicken breasts into a baking dish. Season with salt and pepper. Drizzle with olive oil. Place thyme springs in and around the chicken.
- Roast until the chicken is cooked through (reaching an internal temperature of 165°), about 20 to 30 minutes.
- Cool to room temperature and cut into ½-inch cubes.
Make salad and dressing
- Place the chicken, apples, celery, and water chestnuts into a bowl.
- Whisk together the sour cream, mayonnaise, and lemon juice in another bowl.
- Stir in the cinnamon and curry.
- Season with salt and pepper.
- Pour the dressing into the chicken, apple, and celery mixture. Toss to coat.
- Fold in the sliced almonds and chopped fresh thyme.
- Season with salt and pepper.
- Serve the salad on a bed of lettuce and garnish with tomato wedges and cucumber slices.
