Crispy Cauliflower with Buffalo Sauce
The secret to achieving an impossibly light, shatteringly crisp crust on these cauliflower florets lies in the batter chemistry. By replacing half of the liquid with high-proof vodka, we limit the formation of gluten (which makes batter tough and heavy). More importantly, alcohol evaporates much faster and at a lower temperature than water. When the battered cauliflower hits the hot oil, the vodka vaporizes instantly in a violent burst, creating thousands of microscopic bubbles that dry out the crust in seconds, resulting in a perfectly cragged surface that holds onto the rich hot pepper sauce without turning soggy.

Batter
- oil for frying
- ½ cup cornstarch
- ½ cup unbleached all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon kosher salt
- ½ cup vodka
Cauliflower and Buffalo Sauce
- 1 head cauliflower, cut into 1-inch florets, about 4 to 5 cups
- 2 to 4 garlic cloves, peeled and minced
- 2 tablespoons butter, melted
- ¼ cup hot pepper sauce
- 2 tablespoons chopped fresh chives
Instructions
- Add oil to a deep pot coming up no more than 1/3 of the side. Heat to 375°.
- Whisk together the cornstarch, flour, baking powder, and salt with vodka and ½ cup water in a large bowl to make a thin batter, with a consistency like cream.
- Place the cauliflower into the bowl and toss to coat.
- Add cauliflower pieces to the oil. Do not overcrowd the pot. Cook until the cauliflower turns golden brown, about 3 to 5 minutes. Transfer to a paper-towel lined baking sheet.
- In a large bowl, mix the garlic and butter. Stir in the hot pepper sauce.
- Toss the fried cauliflower in the sauce. Transfer to a serving platter and garnish with chopped chives.
