Sweet Potato Corn Bread

Ingredients
For wet ingredients
- 1 cup sweet potato puree
- 1 cup milk
- ½ cup sour cream
- 4 large eggs
- ½ cup butter, melted
For flour and cornmeal
- 2 cups plain yellow cornmeal
- 1 cup unbleached all-purpose flour
For sugar and seasonings
- ¼ cup granulated sugar
- ¼ cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Instructions
- Preheat the oven to 375°.
- Coat the bottom and sides of a 9-inch square (or round) baking pan with vegetable oil spray.
- Whisk together the sweet potato, milk, sour cream, and eggs in a large bowl.
- Stir in the melted butter.
- In a separate bowl, whisk together the cornmeal, flour, sugars, baking powder and soda, salt, cinnamon, and nutmeg.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Pour the batter into the pan.
- Bake until a tester inserted into the middle comes out clean, about 45 to 50 minutes.
- Place pan on a baking rack to cool.
- Cut into squares and serve with a drizzle of honey and a dollop of butter.
Thing to Note:
You can buy canned sweet potato puree in your grocery store. In most cases when you buy pumpkin puree, you’re really getting sweet potato puree! Who knew?! Or you can make your own puree by starting with a sweet potato. Peel it and cut it into chunks. Place the chunks in boiling water and cook until soft, about 15 to 20 minutes. Drain and place into the bowl of a food processor. Pulse until the potato is pureed. One medium sweet potato will yield about a cup of puree.
