Which chocolate to use? Well, here’s the skinny: unsweetened chocolate is also called baking or bitter chocolate. When sugar is added to unsweetened chocolate, it morphs into bittersweet, semisweet, or sweet chocolate, depending on how much sugar is added. Bittersweet has the least amount, while sweet chocolate has the most sugar. Adding dry milk to sweet chocolate creates milk chocolate. You can substitute bittersweet, semisweet, and sweet chocolate at will—but remember that baking chocolate will not be the same, and milk chocolate is an ingredient different from the rest.
