Ingredients
For date filling
- 2 cups pitted dates, chopped
- 1 teaspoon vanilla extract

Instructions
Make filling
- Preheat the oven to 350°.
- Place the dates into a saucepan over medium high heat.
- Cover with 2 cups water and bring the liquid to a boil.
- Reduce the heat to medium and simmer until the dates become soft and thick, about 8 to 10 minutes.
- Add the vanilla.
- Cool to room temperature.
Make crust
- Place the flour, brown sugar, oats, cinnamon, allspice, cloves, and baking soda into the bowl of a food processor.
- Pulse to combine.
- Add the butter to the bowl.
- Pulse to incorporate the butter into the flour mixture.
Assemble and bake
- Place half of the dough into the bottom of a (11 x 9 x 2-inch) baking dish coated with vegetable oil spray.
- Cover the dough with the date mixture.
- Crumble the remaining dough overtop of the filling and gently press down to adhere.
- Bake until the top is golden and the center is set, about 30 to 40 minutes.
- Cool in the dish to room temperature.
- Use a sharp knife to cut into bars.
