Blueberry-Lime Breakfast Rolls
These sweet breakfast rolls feature a plush, buttery yeast dough wrapped around a vibrant filling of fresh blueberries, lime zest, and sugar. The combination of sweet, juicy berries and bright, zesty lime glaze makes for a refreshing twist on the classic cinnamon roll. Preparing the dough ahead and letting it rise overnight makes morning baking an effortless and joyful experience.

Ingredients
For the Liquid Yeast Starter
- 1 cup whole milk, room temperature
- ½ cup unsalted butter, room temperature, 1 stick
- 3 large eggs
- ½ cup natural cane sugar
For the Flour Dough Mix
- 3 ½ cups unbleached all-purpose flour
- 1 cup pastry flour
- ½ teaspoon kosher salt
- 2 ½ teaspoons dry active yeast
For the Baking Pan
- vegetable oil spray, for coating
For the filling
- 1 pint fresh blueberries, about 2 cups
- ½ cup natural cane sugar
- 3 large limes, zested, about 6 tablespoons
- 1 tablespoon cornstarch
- ½ cup unsalted butter, melted, 1 stick
- 2 tablespoons half-and-half
Glaze
Instructions
Make the dough
- Place the milk, butter and eggs into the pan of a bread maker.
- Add 1⁄3 cup can sugar, flour and salt.
- Place the yeast into the yeast compartment (or follow the specific directions for your machine). Start the machine on the dough cycle.
- Coat a 13 x 9 x 2-inch baking dish with vegetable oil spray. (You can also choose to place the rolls into two small pans.
- Bake one and freeze one!) When the dough is ready, turn it out of the pan onto a lightly floured work surface. Use a rolling pin to roll the dough out to a large rectangle, about 12 x 14-inches with the longest end horizontally across your board. Use extra flour so that the dough does not stick to the board or to the rolling pin.
Fill and roll
- Toss the blueberries with ½ cup cane sugar, lime zest, and cornstarch. Use a brush to spread the melted butter over the dough.
- Spread the blueberry filling over the dough. From the side nearest you, roll the dough up and over the filling to form a 14-inch log.
- Cut the log in half, and then in half again.
- Cut each piece into 3 (about 2-inch) slices. This will give you 12 rolls.
Proof and bake
- Place each roll, cut side down into the baking dish.
- Cover the rolls with a towel and let them rise until they are puffy, about 2 hours. (Or, you can cover the rolls with plastic wrap and put in the refrigerator overnight.) Preheat the oven to 375°.
- Brush the rolls with half-and-half, and place into the oven.
- Bake until they are golden, about 15 to 20 minutes.
Glaze
Of course, you do not need a bread maker to make the dough for this recipe. I just like using all the time-saving appliances I can find! You can do it yourself. Mix the dough together using a dough hook attachment for your electric mixer (I know . . . another appliance . . .) You want to have the dough come together on the hook. After it does come together keep the machine running for about 5 minutes. This gets those glutens working! Place the dough onto your lightly floured surface and knead until you have a smooth ball. Place the dough into a lightly oil bowl and cover with plastic wrap. Let the dough rise in a warm place until doubled in size, about 1 hour. I use the proof setting in my warming drawer for this.
