The Passion Fruit Syrup

The whole drink is built on a syrup you make yourself. Simmer sugar and water with passion fruit purée and a little lime zest, finish it with a touch of vanilla if you like, and let it cool before straining — it keeps for weeks in the refrigerator. This is the tropical backbone of the Hurricane, the thing that makes it taste like fruit rather than candy.

Two Rums and a Day's Rest

Light and dark rum together give the Hurricane its character — the light keeping it bright, the dark lending molasses depth and that signature amber color. Stir the rums, juices, syrup, and grenadine together and let the base rest overnight so the flavors mellow and marry. The sparkling citrus soda goes in only at the last moment, just before you pour over ice.

Passion Fruit Simple Syrup
  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup passion fruit purée
  • 1 teaspoon fresh lime zest
  • 1 teaspoon vanilla extract optional
Spirits & Mixers
  • 1 1/2 cups light rum
  • 1 1/2 cups dark rum
  • 1 cup chilled sparkling citrus soda
  • Ice
Juices & Syrups
  • 1 cup passion fruit juice
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/2 cup Passion Fruit Simple Syrup
  • 2 tablespoons grenadine
Garnishes
  • Orange wheels
  • Lime wheels
  • Maraschino cherries
  • Fresh mint sprigs

Method
 

Syrup Preparation
  1. Simmer water and sugar in a small saucepan until dissolved. Add passion fruit purée and lime zest, simmer 5 minutes, add vanilla, cool and strain.
Cocktail Assembly
  1. Combine light rum, dark rum, passion fruit juice, orange juice, lime juice, Passion Fruit Simple Syrup, and grenadine in a pitcher. Refrigerate 2 hours.
  2. Stir in sparkling citrus soda just before serving.
  3. Fill Hurricane glasses with ice, pour cocktail over top, and garnish with orange wheel, cherry, and mint.
