Asparagus au Gratin with Mushrooms and Shallots

Veggies and Butter
- 14 large, thick asparagus spears, tough ends removed and bottom half peeled
- 4 tablespoons butter, divided
- 2 medium shallots, peeled and thinly sliced, about ½ cup
- 1 pint mushrooms, sliced, about 2 cups

Instructions
Blanch asparagus and prep veggies
- Preheat your oven to 425°.
- Coat a baking dish with vegetable oil spray. (If you have individual gratin dishes, this is the time to use them!)
- Bring a pot of salted water to boil.
- Prepare an ice bath.
- Carefully drop the asparagus spears into the pot. Cook until tender, just a couple of minutes.
- Transfer to the ice bath. Once the spears have cooled, drain them on paper towels.
- Pat dry and cut them into 2-inch diagonal lengths.
Cook and assemble gratin
- Melt 2 tablespoons butter in a sauté pan over medium heat.
- Add the shallots and mushrooms and cook until tender, about 2 to 4 minutes.
- Season with salt and pepper.
- Add the shallots and mushrooms to the bottom of the baking dish. Place the asparagus on top.
- Cut the remaining butter into small pieces and scatter them around the dish.
- Sprinkle on the cheese.
- Pour the cream around the edges of the casserole.
- Bake until golden and bubbling, about 25 to 30 minutes.
An ice water bath is a bowl of water filled with ice and topped off with water. If you plunge a cooked or partially cooked veggie right from the heat into an ice bath, the cooking process stops, and the veggie keeps its bright color. Pretty smart, huh?
