Instructions

  1. Stir the flour, baking powder, baking soda and salt in a large bowl. In a separate bowl, whisk together the eggs, buttermilk, milk, honey and vanilla. Whisk the wet ingredients into the dry ingredients until smooth.
  2. Heat a griddle or large nonstick skillet over medium high heat. Ladle batter onto the griddle to form 4-inch pancakes. When the pancakes are just set, sprinkle with a few blueberries. Cook until the pancakes are golden on the bottom, about 3 to 4 minutes. Flip and cook until the second side is golden, about 2 minutes more. Keep pancakes warm in a 200° oven or warming drawer.
  3. Berry Good Maple Syrup Pour the syrup and blueberries into a saucepan and heat to a boil. Reduce the heat and simmer until the sauce is thickened and the blueberries begin to burst, about 10 minutes. Reduce the heat to very low to keep the syrup warm.
  4. Serve the pancakes with a few extra fresh blueberries, a sprinkle confectioners' sugar and a ladleful of syrup.
Sunday Know How

I use pastry flour in this and other recipes because it is a high-starch, low protein flour that produces a very tender pancake. My favorite is King Arthur's pastry flour, which you can find in your grocery store. A denser version is made with whole-wheat flour. In a pinch, you can make your own by mixing equal amounts of cake flour with unbleached all-purpose flour.

Gotta Have Gadgets

A warming drawer is one of those accessories, you might consider adding if you are remodeling your kitchen. It fits into a drawer in a cabinet, and will save you hours and hours of time. Trust me, when you're prepping for a big party – or even trying to feed a family on different schedules – this is a Gotta have Gadget. Let me break it down for ya! If you entertain a lot, you might look at a free standing warmer. However, if a warming drawer is not in your plans, you can substitute by holding cooked food in an oven, set on its lowest temperature. Remember that food continues to cook after you remove it from the heat source. You'll want to slightly undercook any food, you plan to "keep warm."

The Heart of the Table

As the warm, inviting scent of warm cinnamon and sweet spices and the golden crust of these whole grain blueberry pancakes fill the room, it becomes the cozy heart of the table. Passing this beautiful griddle centerpiece invites guests to slow down and enjoy sweet morning conversations.

The Art of the Host

  • a seamless, high-heat resistant silicone spatula in a soft slate grey
  • unbleached, pre-cut parchment paper sheets for clean releases
  • a well-seasoned 12-inch cast-iron skillet with dual pour spouts
  • a set of heavy-gauge, satin-finished stainless steel mixing bowls
  • a platinum-grade non-stick silicone baking mat for consistent heat conduction

Neighborly Grace

  • THE PRESENTATION: Layout your tabletop with a warm oatmeal linen runner running down the center of a rustic white oak table. In the center, place a pre-warmed stoneware platter hosting the golden griddle cakes stacked high, kept warm under a clean linen napkin to trap the heat. Once guests are seated, serve them family-style, letting them drizzle warm syrup from a small ceramic pitcher and add pats of butter. This abundant display invites guests to help themselves, creating an immediate, relaxed atmosphere.
  • THE POUR: To harmonize with the warm baking spices and rich fruit notes of the Whole Grain Blueberry Pancakes with Berry Good Maple Syrup, we recommend a sweet, sparkling Moscato d'Asti or a rustic, semi-dry artisanal French hard apple cider. These beverages offer notes of sweet apricot, honeyed orange blossom, and crisp red orchard apple that mirror the sugars and spices while providing a lively carbonation. Serve chilled at 40°F in a crystal coupe. For a non-alcoholic alternative, offer a sparkling spiced apple cider simmered with star anise, Ceylon cinnamon, and fresh orange rind, served at 42°F in a chilled highball glass. The warm baking spices and bright apple sweetness create a comforting sensory harmony.
  • THE VIBE: Create a cozy, inviting atmosphere for a party of eight in a sun-drenched sunroom, where floor-to-ceiling windows catch the soft, golden morning sunbeams. Let the air carry the gentle, acoustic sounds of front-porch bluegrass—featuring the warm, finger-picked melodies of Doc Watson or Tony Rice playing softly in the background to set a relaxed, nostalgic tempo. Keep the lighting completely natural, allowing the morning sun to filter through leafy houseplants and illuminate the casual family chatter. Arrange plush, comfortable seating with plenty of soft linen throw pillows, encouraging guests to linger long after the meal is finished.
